Chicken stir fry.

Tumeric and Black Pepper Chicken with Asparagus

Sweet, pungent and delicious. This stir fry goes together in minutes. Serve with rice!

Ingredients
  

  • 1 pound boneless skinless chicken thighs cut into 1-inch pieces
  • 1 lb. asparagus woody ends trimmed off and remaining sliced into thirds
  • 3 tablespoons honey
  • 1 teaspoon rice vinegar
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 ½ teaspoons ground turmeric
  • 1 tablespoon olive oil
  • 1 lime cut in wedges (optional)
  • Salt to taste

Instructions
 

  • Step 1
  • Mix ¼ cup water with the honey, pepper and ½ teaspoon salt; set the honey mixture aside.
  • Step 2
  • In a larger bowl, stir together the flour, turmeric and 1 teaspoon salt. Add the chicken and toss until all sides are coated.
  • Step 3
  • In a large pan or skillet, heat the olive oil over medium-high heat. Add the chicken and cook until the turmeric is fragrant and the chicken is golden brown on both sides, 2 to 3 minutes per side.
  • Step 4
  • Add the asparagus and cook for another 2 minutes.
  • Step 5
  • Add the honey mixture and stir. Cook until the chicken is cooked throughly and the sauce has thickened, about 3-4 minutes.
  • Step 6
  • Remove from heat. Stir in the vinegar and taste. Add more salt or pepper if desired. Serve with limes to squeeze over the top.
